Balmoral Hospitality to operate The Waterfront Tavern

New standard in dining and entertainment set for Shell Cove community

Balmoral Hospitality has been selected as the owner-operator of The Waterfront Tavern at Shell Cove, promising to set a new standard in dining and entertainment on the NSW South Coast.

This announcement follows the recent start of construction work on the restaurant precinct.

Shellharbour City Council Mayor Marianne Saliba says the tavern is one of the most anticipated aspects of The Waterfront Town Centre. 

“The tavern is one of the features of the precinct that the community has been most looking forward to, and it will be a wonderful family gathering place in this vibrant and exciting new area,” Cr Saliba says.

“It’s exciting to see the different components of this new major waterfront destination come to life enhancing not only the tourism focus of Shell Cove, but of the entire Illawarra South Coast region.

“Balmoral Hospitality has a well-established association with our area and has already operated numerous businesses in the region. Their team really understands the vision for Shell Cove so we’re delighted to welcome them onboard.”

Balmoral Hospitality’s platform for The Waterfront Tavern precinct includes:

  • The Bar & Bistro, with a kids’ area, space for large group bookings and special occasions, a wood-fired oven and central bar.
  • The Clubhouse, a casual waterfront meeting spot featuring live music, special event screenings, cocktails and bar food.
  • The Kiosk, offering convenient outdoor food and drinks such as coffee, pastries, gelato, picnic hampers and take-away food.

Simone Dyer, Development Director – Shell Cove, Frasers Property Australia says Balmoral Hospitality has big plans for attractions and events, including jazz on Sundays, craft beer evenings, meet the producer dinners, a pop-up food festival event, picnic in the park with hampers from The Kiosk and live music.

“Balmoral Hospitality will bring a vibrance and energy to The Waterfront Tavern precinct that will attract patrons from far and wide,” Ms Dyer says.

“Balmoral’s ideas are aligned with our own in what we want The Waterfront to represent for the community – a family-focused destination where people can meet, relax, enjoy good food and entertainment overlooking spectacular views of the NSW South Coast.”

Nestled on the ocean front, the 1,086 sqm tavern is part of the Shell Cove community created by Shellharbour City Council and Frasers Property Australia. The Waterfront Tavern will cantilever over the new public boardwalk and marina to make the most of the harbour views to the north and east.

Balmoral Hospitality has vast experience operating hotels and taverns. In the region, the company built and operated Central Hotel in Shellharbour (awarded Country Hotel of the Year 2013), as well as Figtree Hotel in Figtree and the award-winning Headlands Hotel at Austinmer Beach. Gregory Hills Hotel –  just outside the region, has also received awards and Engadine Tavern in Engadine, Royal Oak Hotel at Double Bay and Caves Beachside Hotel at Lake Macquarie are also in Balmoral’s portfolio.

The Waterfront Tavern at The Waterfront, Shell Cove is expected to be completed in 2021. Shell Cove is a new community in a natural coastal setting surrounded by beaches, parks and wetlands, and close to schools, transport and major centres.
